I LOVE all things pumpkin this time of year.  It’s super simple to get canned pumpkin and add a fall flair to any recipe from quick breads to chili to oatmeal to yogurt.  Pumpkin adds a special festive flavor, as well as nourishing boost to your bowl, plate or cup!

For this month’s Recipe Redux theme: Fresh from the Pumpkin Patch, I am going to whip up a simple Pumpkin Spice Butter with only 3 ingredients and no added sugar!.  You gotta love it, right?  Tasty, sweet, and sweetened naturally.   So, how is it sweet?  Prunes a.k.a. dried plums.  Puree prunes into this pumpkin to give it a sweet kick, plus a nourishing boost.

Did you know that prunes are great for bone health as they are packed with good-for-your-bones nutrients, such as potassium, vitamin K, phosphorus and boron. I love that they taste great!

It’s just 3 simple ingredients!

  • Pumpkin puree, canned
  • D’Noir Prunes — these are my faves as they are deliciously plump with a rich, elegant flavor
  • Gingerbread spice (ground ginger, cinnamon, allspice and nutmeg)

Pumpkin Spice Butter

Ingredients

1-15 ounce can pumpkin puree, unsweetened

6 prunes (dried plums)

1 teaspoon gingerbread spice

Directions

Put all in ingredients into a food processor and pulse until well-blended.  <That’s it!>  Spread on your favorite whole grain bread, or crackers with a sharp cheddar cheese or dollop in plain yogurt, swirl and enjoy!
